
Either I have a very selective memory, or this past week has been hotter than the summer we spend in Florida. Thankfully now it's cooled down and I'm back to watering my garden just once a day!
When the heat and humidity combine to create major wilting (of plants and people), the last thing I want to do is eat a hot, heavy meal.
Believe it or not, sometimes even grilling isn't an appealing option. Especially when you just burnt through the last of your propane!
Although this probably isn't sufficient as a meal-replacement, it is a great cooling snack. You will have to be prepared with frozen bananas in the freezer. I usually keep a few peeled bananas in an airtight container in the freezer for times like this.

Peanut Butter Chocolate Banana Smoothie
Yield: 2 servings
1 banana, peeled and frozen
2 cups milk
3 tablespoons chocolate
2 tablespoons unsweetened cocoa powder
2 heaping tablespoons peanut butter
1 tablespoon chia seeds
1 teaspoon vanilla extract
10 ice cubes
Place all ingredients in a blender and blend until smooth.
Serve immediately.

I have been eating a smoothie just like this for the last couple weeks for breakfast, and I love it!

DeleteThis will make a great snack, or even lunch on a hot summer day! Light, yet filling thanks to all the bananas and peanut butter. I am also not a big a fan of grilling in the Summer.
